Etymology: Unknown. Possibly from Proto-Slavic *kъlbasa (“sausage”), which is the origin for Polish kiełbasa, Russian колбаса́ (kolbasá), Hungarian kolbász but a derivation presents difficulties. Another theory posits a derivation from Greek γαρδούμια (gardoúmia, “calf intestine”), Albanian gardumbëzi (“sausage”). See also calbaș.
